Cauliflower curry recipe - A simple yet delicious & flavorful Indian cauliflower curry made with onions, tomatoes, spices & herbs. It goes so good with plain rice, roti, chapati, naan or plain paratha. This easy to make curry is a favorite at my home & is made very often for a quick dinner.

The ingredients needed to make Cauliflower curry:
  1. Get 1 large cauliflower
  2. Get 500 g potatoes
  3. Prepare 3 carrots
  4. Get 6 tomatoes
  5. Get 2 onions
  6. Take 200 g lentils
  7. Make ready 4 cloves garlic
  8. Get 5 cm piece of ginger
  9. Take 1 tsp mustard seeds
  10. Make ready 1 tsp cumin seeds

  13. Prepare 1 tsp ground corriander
  14. Make ready 2 tsp turmeric

Squeeze over the lime juice and check for seasoning. Can be made a day ahead - pour in the coconut milk, reduce by half, then leave to cool and keep in the fridge. It's made with cauliflower, green peas, diced tomatoes, curry powder, and coconut milk. This recipe is also gluten-free and vegan.

Instructions to make Cauliflower curry:
  1. Prepare the ingrediences: dice potatoes, carrots, onions, tomatoes; cut the cauliflower into florets; finely cut the garlic and ginger.
  2. Add some oil to a large sauce pan, and fry the onion, garlic and ginger on a medium heat, stirring consistently for approx. 10 mins until softened. After, place the onion mixture aside.
  3. Add a small bit of oil to the large sauce pan, and add the chopped tomatoes. Mix all the spices together (the mustard, cumin seeds may need to be toasted/ground). Once the tomato mixture has heated up, add in the spice mixture and curry leaves. Cook in a medium heat for approx 10 mins or so.
  4. Add the diced potatoes and carrots to the tomato recipe, and stir to coat. Add the prepared stock and bring to a simmer. Cover and let cook for 10 mins.
  5. Add the cauliflower florets and lentils to the mixture. Cover and let cook for 10 mins.
  6. It's done!

If you don't add the green peas, it's low-carb too. Add the curry powder, chilli flakes and cumin seeds and fry for a further minute. Add the cauliflower florets, stir well to coat in the spices, and then add enough hot water to cover the cauliflower. Heat the oil in a saucepan. Stir in the tomatoes and sugar.
