Adhirasam (Tamil: அதிரசம்) or Kajjaya in Kannada or Ariselu in Telugu or Anarsa in Marathi or arisa pitha in Odia is a type of Indian sweet from Tamil cuisine, Kannada cuisine, Telugu cuisine and Marathi cuisine and Odia cusine. The doughnut-like pastry has a long history of popularity in Kannada, Telugu, Maharashtra, Orissa and Tamil civilization. Adhirasam is a traditional sweet dish which will be done for most of the festivals.

To get started with this particular recipe, we have to prepare a few components. You can cook athirasam using 5 ingredients and 10 steps. Here is how you cook it.

The ingredients needed to make Athirasam:
  1. Prepare 400 g raw rice
  2. Prepare 300 g jaggery
  3. Take 6 green cardamom
  4. Get 1/2 cup water
  5. Make ready Oil to deep fry

Instructions to make Athirasam:
  1. Wash and soak raw rice for atleast 2 hours
  2. Drain the water completely and spread it on a cloth. Wait until the cloth absorbs excess water.
  3. Dry grind the rice along with cardamom
  4. To make sugar syrup: Powder the jaggery and boil it with 1/2 cup water until you get soft ball consistency (pour a tsp of jaggery syrup into a cup of water. It shouldn’t dissolve in water. You should be able to collect it and make a soft ball out of it). No need to get 1 string consistency.
  5. Switch off the flame. Add rice flour to the syrup little by little and stir it continuously. Dough is ready
  6. Keep it at room temperature for atleast 2 days. (Can be kept at room temperature for 2 to 5 days)
  7. After 2-5 days, Heat oil in a pan for deep frying. Divide the dough into small lemon sized balls.
  8. Take a piece of plastic wrap or ziplock, grease with oil. Grease your hand with oil too. flatten the ball by pressing with hand. Not too thin, not too thick. Make a hole in the center. Carefully drop it in oil. Fry both the sides in medium flame until it turns golden brown. Do it one by one
  9. You can make 25 to 30 athirasams with this quantity.
  10. Enjoy eating!

Athirasam mixing breaking in the heat oil … how can solve this give me any suggestions. You can try adding flour and milk and try again, but first try in small amount, if it works.
