The ingredients needed to make Chicken Lo Mein:
- Take 1-2 lb chicken (shredded if pre-cooked) cut into strips if raw
- Take 3 tablespoons rice wine vinegar
- Get 1/2 cup soy sauce
- Get 1 1/4 cups chicken broth or vegetable broth
- Make ready 1 tablespoon sesame oil
- Make ready 1/2 teaspoon ground black pepper
- Make ready 2 tablespoons cornstarch
- Prepare 1 Package uncooked Lo Mein Noodles
- Prepare 2 tablespoons minced fresh ginger root (you can use dry as well but it wont be as powerful in flavor)
- Take 3 cloves minced garlic
- Get 7 oz fresh shiitake mushrooms, stemmed and sliced
- Take 6 green onions, whites and greens chopped
- Get 2 small zucchinis chopped into 1 inch cubes
- Get 1 cup mirin
Chicken Lo Mein is a favorite around here, and this easy homemade version is even better than takeout! Fresh egg noodles, delicious hoisin grilled chicken and tons of tender, crisp veggies tossed in a delicious homemade lo mein sauce! Lo Mein is a fantastic Chinese takeout option if you're looking for something a bit thicker than the traditional Chow Mein. Cooking a large batch of lo mein in a wok or over crowding the wok will result in steaming the ingredients rather than stir frying.
Steps to make Chicken Lo Mein:
- Combine rice wine vinegar, soy sauce, mirin, broth, sesame oil, black pepper, ginger, and garlic in a large bowl to create the sauce marinade. Wisk together well.
- Chop onions, zucchini and shiitake mushrooms and add to the sauce marinade.
- Add the sliced chicken to the sauce marinade. Note: Letting this marinate in the fridge will enhance the flavor in the ingredients and not just the sauce.
- Cook the Lo Mein noodles according to package directions. Drain and set aside.
- Add chicken, vegetables, and sauce to wok or skillet on high heat and simmer for 10 minutes.
- Take a small bowl or glass and remove 1/4 cup of the heated sauce and add the cornstarch and mix thoroughly.
- Add the cornstarch mixture and the Lo Mein to the wok with the simmering chicken and vegetable and the remainder of the sauce. Simmer for 3 minutes. Serve.
Chicken Lo Mein is a classic takeout dish we've all probably enjoyed. We find, however, that it's getting harder than ever to get a good lo mein these days! Hence the need for this recipe.
