Steps to make Pav bhaji paratha:
- To make the dough: Take wheat flour and salt in a bowl. Add water to make a soft dough. Keep it covered with a cloth for 10-15 minutes.
- To make the stuffings: take potatoes, carrot, cauliflower and capscicum in a microwave safe bowl. Cover and microwave for 4 minutes. Keep it aside.
- Now heat oil in a pan. Add cumins and black mustard seeds. Let it crackle. Then add chopped onion and saute for 2 minutes, then add microwaved vegetables and ginger paste in the pan. Stir fry for 2 more minutes. Mash the cooked vegetables properly from the back of the spoon. Switch off the flame.
- Further, add dry mango powder, pav bhaji masala, chopped chilli and coriander leaves. Mix well and let it cool completely.
- To make parathas: divide the dough into 4 equal portions like a ball shape. Press in the middle and fill the stuffing prepared and pack it properly. Now, apply some wheat flour on the roller and roll it into paratha.
- Heat a tawa and put the paratha on it and roast till golden in colour applying oil or ghee to both the sides.
- Serve parathas with curd and pickle.
